We are trying to eat less meat and more veggies. My husband made Veggie burger for lunch on Mother's Day. The food was good and we have good friends over for lunch.
The burger hold together very well and have good flavor and very moist. I decided to write down the recipe before anything was forgotten.
Burger Patty Ingredients
4 boiled potatoes
1/2 onion, finely chopped
1/2 red capsicum, finely chopped
1/2 green capsicum, finely chopped
1 carrot, finely chopped
6 mushroom, finely chopped
2 cloves garlic, minced
Some parsley
1 tablespoon ground cumin
salt and ground pepper to taste
35g of fresh bread crumbs
1 table spoon E Excel Blended Cooking Oil (Macadamia Oil)
E Excel VegeColor spread
3 Tablespoon plain yogurt, 1 tablespoon mayonnaise, 1 sachet of vegecolor. Mix all together.

Toppings
Some lettuce leaves, sliced tomatoes, sliced cucumber, slice cheese
To prepare burger patties
1) Mash potatoes in a large bowl, removing any large pieces of potato skin. Mix onion, red capsicum, green capsicum, carrot, mushroom, garlic, parsley and bread crumbs with a fork. Mashing it well.
2) Mix cumin, salt and ground pepper into the mixture. Form mixture into patties.
3) Working in batches, heat 1 tablespoon of E Excel Blended Cooking Oil in a large nonstick skillet over medium-high heat. Cook patties in hot oil until golden and set on the bottom, 4 to 5 minutes flip each burger and cook until golden and hot through out, about 4 minutes more.
